Manga inji (Mango ginger) pickle

We're already more than half way through the first month of a new year. 2009 has so far been a year of change for me. After lots and lots and then some more thought, I am finally back to work. That's what's kept me away from blogging for the last few weeks. So, here's wishing all my blogger buddies a Very belated but Happy New Year.
My first post of this year is something very, very simple to make if you have the ingredients handy and every bite will bring with it a burst of flavours from the ingredients. Two of the ingredients that I've used here - the mango ginger and the peppercorns are from my parents' garden. Manga inji or mango ginger, for those who are not familiar with it is a rhizome that looks like ginger but smells like raw mangoes when you cut it.

What you need:
Mango ginger -1/2 cups,washed, skinned and chopped into small pieces
Green pepper corns - 1 tbsp washed, dried and destalked
Lemon - 1 , cut into small pieces or juice of a lemon
Salt
(The quantities are approximate and can be adjusted according to your taste)
Mix all the ingredients together. See, didn't I say it is easy???

It can be eaten immediately and if refrigerated, stays good for upto 2 weeks.

I got this summer Mango ging and made a pickle but very different than your's... Sounds good ur method too

Great to know you are back to work. So now I know why u were missing from blogging. How is ur daughter adjusting to her working mom?

Coming to the pickle, I love maanga inji. But hv never tried adding fresh pepper corns. I am sure that is a winning combo.

I'm a big fan of inji manga. I still remember the surprise when I first tasted it! We make manga inji pickle like this, and add a green chillie & mustard seasonings. I really liked the idea of adding green pepper! Thats another item I am very fond of! Wish you all the best for your work. We long to give up and be free, but after a few days, it becomes difficult to stay away from work, besides the obvious advantages!

Its been a long time sicne I have even seen a mango ginger. back home, m mom frew it in the garden & it was such a treat to eat chutneys and pickles in winter... when we did not have mangoes.. memories...

Manga inji is something we love, though we make it a bit different. I also like the green peppercorn pickle which we make as you have done this pickle.
I haven't tried mangainji and peppercorns to gether though. Must be lovely.

Hi,Just stopped by to ask a doubt.I have seen a rhizome at a chinese market close by and when i asked them they said it was young ginger.It did not strongly smell of mango though,just a wee bit.Could that be maanga ingi?

Andysru, it probably is.....manga inji does not have a very strong smell, but it is a very distinct yet mild smell of raw mangoes....
